You can use any yarn weight you like to, just make sure to use the same weight for the entire doll.
The same goes for the cittern (guitar)
For colors I recommend a minimum of 4 different for the doll, and 2 for the Cittern (guitar)
In addition to the original sized doll (sock weight) portrayed in this pattern, I have listed some possible yarn weight options below. Yarn amount and hook sizes may vary according to your personal preference.

Wire, for neck support and for the arms and legs, to make them poseable.
Chopstick (or other tool) to help filling the arms and legs.
